The build is the easy part for us, the sign-off is the important part for you. Take each of the five as slowly as you need. Accept the ones that are right, request changes on the ones that are not, and the moment all five are signed off we lock scope and start migrating your data. Anything you think of after that is not lost, it just becomes a small variation with its own sign-off, so your go-live date stays safe.
